Fresh from the oven – Tuna Sandwich with Kerstin Fossen

It is very good to get away from the sweet, and simply enjoy some simple salad and good bread.

My favorite is yogurt with fresh berries and a cup of delicious tea and freshly squeezed juice.

Most certainly my favorite, is to eat toasted bread with “Tuna Salad” with a good, soft bread, flavored with, for example. chives.

This soft and succulent bread has a crispy crust around them …… so good.

Chives bread:

  • 500 g of flour
  • 2.5 dl lukewarm water
  • 50 g fresh yeast
  • 1 Tbsp. sugar
  • 125 g Philadelphia cheese w / chives taste
  • 0.7 ml of olive oil
  • 1 tsp. salt

  I use Philadelphia cream cheese with “chive flavor.”

Pour the flour, philadelphia cream cheese, fresh yeast, salt and sugar in a mixer bowl.

Here I use a dough hook, knead the dough and at least 15 minutes on medium speed.

After the dough is kneaded for about 15 minutes, so you’re good. Now need only to be raised to twice.

I put a cloth over and placed it in the sun. You can also put it on a chair in front of a hot oven, because the dough is raised faster.

After 30 minutes it is raised to twice that.

I work with the dough as little as possible to retain the greatest amount of air in it. Simply pour the mixture straight from the bowl into the baking pan.

Let it be increased to twice, which took about 15 minutes in the sun.

Brush with a little beaten egg.

Into a preheated oven at 175C

Bake first for 15 minutes, then add the baking paper over the bread and fry it further for 20 min to.

Done! ….. And of course it smells heavenly good.

I take the bread out of shape and allows it to be completely cool before I cut it into slices.

You can make this bread with all kinds of flavors; philadelfia cheese found in lots of flavors, such as. garlic, or meditireanian taste.

This bread is soft and tastes super good.

I love to toast the bread and eat it with tuna salad.

Tuna Salad:

  • Tunfiks
  • celery stick
  • summer bulbs
  • pickled cucumber
  • mayo / dressing
  • salt / pepper
  • lemon juice

I use mostly mayonnaise, or mix a little with a good dressing, just to get an exciting taste.

Then you just mix everything together and enjoy the salad with the bread.

Kerstin’s Favorite Pumpkin Pie Recipe!

Original Recipe Yield 1 – 9 inch deep dish pie

Ingredients

  • 1 (9 inch) unbaked deep dish pie crust
  • 3/4 cup white sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 2 eggs
  • 1 (15 ounce) can LIBBY’S® 100% Pure Pumpkin
  • 1 (12 fluid ounce) can NESTLE® CARNATION® Evaporated Milk

Directions

  1. Preheat oven to 425 degrees F.
  2. Combine sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs lightly in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shell.
  3. Bake for 15 minutes. Reduce temperature to 350 degrees F.; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. (Do not freeze as this will cause the crust to separate from the filling.)

These Champagne Brownies I saw when I was in our New York. I thought they were perfect to celebrate the new year!

They are also great to take as a hostess gift for those who want to offer something extra!

These brownies can be made without Champagne!

Here is the recipe and procedure:

Champagne Brownies:

230 g butter
500 g sugar
4 large eggs
150 g real cocoa powder
1 teaspoon salt
1 teaspoon baking powder
1 tablespoon vaniljeekstract
170 g flour
250 g chocolate buttons

Take out all the ingredients

  • Melt the butter in a saucepan on low heat or in microwave

  • Remove the pan from the plate as soon as the butter has melted. Add sugar and stir well together.

  • Put the pan back on the plate for 20-30 seconds on low heat. Thus, melt the sugar, you get a shiny touch and an additional shiny surface of brownies.

  • Furthermore, you need a large bowl and the eggs

  • Pour the eggs into the bowl.

  • Beat lightly with a hand whisk for about. 30 sekunder.Tilsett cocoa powder, salt, baking powder, and vanilla extract.

  • It’s a pretty solid move.

  • Add the butter and sugar mixture. Stir together well.

  • Add the flour and baking powder and stir well

  • Add chocolate and stir well together

  • Place baking paper in the bottom of a browniepanneform, ca. 20 x 20cm, so it becomes easier to take the pre-baked cake from the pan.
    Spread batter in pan. Bake at 180 C for approx. 30 minutes.

  • It is not easy to see the glossy “look” of this now that the brownies are done, that because it was so dark and bad light!

Champagne glaze:

  • 1 cup champagne
  • 1 cup sugar

To make the icing, you need 1 cup sugar and 1 cup champagne

  • Warm it up in a pan until sugar is melted

Brush the mixture over the brownies as soon as it comes out of the oven!

It is best to put the cold a few hours in the refrigerator, or an hour in the freezer if you want it to go faster.

Now, just cut it up into pieces perfect!
